The atmosphere is laid back, the servers young and friendly, the view just about perfect, and the food is pretty decent into the bargain. Situated next to one of the resort’s nicer pools, the restaurant offers a shortish menu of casual sandwiches and salads. There are pan-seared grouper and Caribbean jerk chicken sandwiches along with turkey wraps, burgers, and hot dogs.
The “signature” Copa Club consists of turkey, ham, bacon, swiss and cheddar cheese on toasted sourdough lathered with herbed mayo. Prices are moderate and there’s an even cheaper Kids Korner menu. The bar serves up the usual assortment of poolside beverages, both alcoholic and non, and they make a nice accompaniment to appetizers like coconut shrimp and chicken quesadillas. Desserts, too!
